Beef and greens over rice are a classic that anyone can enjoy! Chef Emma Frisch created this easy to prepare flavorful dish with local grass-fed beef, meadow butter, and baby bok choy.

Steps

Make rice.

Make rice.

Place rice in a medium saucepan with 2 cups water. Bring to a boil, cover and reduce to a simmer for 20 minutes. Remove from heat, and let sit for 5 minutes with the lid on. Fluff with a fork.

Stir-fry greens.

Stir-fry greens.

Peel and mince the ginger and garlic. Heat 1 tablespoon olive oil in a large pan over medium high heat. Add garlic, ginger, and 1/4 tsp pepper. Sauté for 2 minutes. Add the greens and tamari. Use tongs to coat the greens in the seasoning. Cover with a lid and simmer until greens are wilted, 3 - 4 minutes.

Thinly slice scallions, then mix miso with 2 tablespoons water. Season beef all over with salt and pepper.

Cook beef.

Cook beef.

Melt half the butter in a frying pan over medium heat. Cook beef, 1 minute each side, then transfer to a plate. Add remaining butter to the pan with miso/water and scallions. Stir for 30 seconds. Return the beef to the pan, toss with the sauce, and cook for 1 more minute.

Serve.

Serve beef and greens over rice, be sure to scrape all the flavorful sauce from the pan after you cook the beef!
